The best Sunday dinner after Thanksgiving
Noodles:
2 cups flour, plus some for handling dough
1 & 1/2 teaspoon diamond kosher salt
4 eggs
Soup:
2 or so tablespoons of olive oil
1 large brown onion, chopped fairly fine
2 large or 6 small carrots, chopped fine to make about a cup
2-3 celery stalks, chopped fine
6 or so cloves of garlic, minced
1-2 tablespoon red pepper flakes - depends on how spicy you like your soup
1 tablespoon each fresh, chopped fine: rosemary, thyme, sage, marjoram
8 cups broth from cooking down the bones of your turkey
1/2 to 1 pound picked turkey in bit sized pieces
Start with the noodles:
Put 2 cups of AP flour in a bowl, and whisk in 1 & 1/2 diamond kosher salt, then add 4 eggs - stir it with a wooden spoon, until all the flour is absorbed. Knead the dough for around 5 minutes, then let it rest for 20 minutes.
While you wait, start the soup:
In a large stock pot, put a few glugs of olive oil and turn the burner on high to start. When the oil is hot, add the chopped onion, carrot, celery, garlic, and red pepper flakes. Add a pinch of salt, and a lot of black pepper - maybe a few teaspoons or so.
Let this cook until it's translucent, then add the 8 cups of turkey stock. Bring to a boil, add the chopped herbs, and then lower to a simmer and cover.
Back to the noodles:
Cut your dough ball into 4 sections, and roll out each as thin as you can, and set aside. If the dough is particularly resistant to stretching, you might need to roll it again after each piece has rested. Once you're happy with the thickness, put a little flour on the top of each, and then roll it into a tube, then slice. How wide you slice each roll is up to you - 1/4 inch for something like Campbells chicken noodle style soup, 1/2 inch for wider noodles, etc. Unroll the noodles once you're done slicing.
You should end up with a nice pile of noodles:
Back to the soup:
Bring the soup back to a boil, and toss in the turkey pieces. Once the soup has come back to a boil, toss in the noodles.
Cook at medium for just a few minutes, and your soup is done!
