Lunchtime Shrimp Stir-Fry

1-2 teaspoon olive oil

Combination of 4-5 cloves garlic, one shallot - chopped fine (can use onions also - should add up to about 1/4 cup chopped)

1/2 cup cooked brown rice 

10-12 small shrimp, defrosted if frozen - if the shrimp are bigger, cut them into bite sized pieces

3-4 handfuls of greens - power greens or spinach - chopped roughly

lemon juice - about half of one lemon

1-2 oz hard cheese, grated fine - parm, pecorino romano, etc.


Heat a pan over medium high heat, and add olive oil & chopped garlic/shallots/onion - cook until lightly browned. 

Add cooked rice and stir.

Add shrimp - let them sit on one side for a minute, then flip them over/stir 

Add chopped greens and lemon juice

Cook until shrimp is pink on both sides and greens are wilted & mixed in well 

Take pan off heat, sprinkle grated hard cheese over the top & stir
