Broccolini Satay

This is a combination of a method for cooking broccolini and a overly complicated recipe to make a satay sauce (links below)

Broccolini

1 bunch broccolini

3 tablespoons water

1 tablespoon olive oil

Follow this cooking method, ignoring the salt & garlic part:  https://themodernproper.com/broccolini

Satay sauce

1/4 cup almond or peanut butter

1 teaspoon coconut aminos

2 teaspoons coconut vinegar

1 inch piece of ginger

1 clove of garlic

Zest of 1 lime

Juice of 1/2 lime

Hot water as needed 

Fried shallots & roasted unsalted chopped peanuts

Add all ingredients and use a stick blender to combine. Add hot water until you have a sauce consistency. 

Put the cooked broccolini on a plate, drizzle the sauce over it. Garnish with the shallots & peanuts.
